While browsing around the internet today, I came upon a form of Snickerdoodles that I have never seen before. Snickerdoodle Muffins. Not only did they look amazing, I can already taste the buttery muffin with the most delectable cinnamon sugar topping. I had to make them. Then while I was google-ing different recipes, I happened upon a little thing called Muffin Monday. The idea is to bring your family closer, each Monday, by trying a new Muffin recipe and sharing it with those you love. I love this idea. I may not post about it each and every Monday, but I will be happy to share amazing recipes that I come across.
SNICKERDOODLE MUFFINS
2 cups flour
1/2 tsp. salt
1/2 tsp. salt
2 tsp. cream of tartar (or 1 tbsp. baking powder)
1 tsp. baking soda
1/2 cup butter, softened
3/4 cup sugar
2 eggs
1 cup milk
2 tsp. vanilla
1 tbsp. sugar
1 tsp. cinnamon
Preheat oven to 325F. Line 12 muffin tins with foil or paper liners.
In a very small bowl, mix together 1 tbsp. of sugar and cinnamon, set aside.
In a large bowl, sift together the flour, salt, cream of tartar (or baking powder) and the baking soda.
In a medium bowl, cream together the butter and sugar.
Add the eggs, one at a time.
Then add the milk and vanilla. Mix until well combined.
Don't worry, you cannot over mix it at this point.
Pour the wet ingredients over the dry ingredients and mix just until moistened.
Fill muffin cups 3/4 of the way full of batter.
Sprinkle with cinnamon sugar.
Bake for 18-20 minutes or until the toothpick inserted in the center comes out clean.
